loki-operator can not be updated to 5.7

The olm.skipRange is "olm.skipRange": "\u003e=5.4.0-0 \u003c5.6.0" in 5.7.0. It should be "olm.skipRange": "\u003e=5.4.0-0 \u003c5.7.0"
