Summary

Collector deployment is currently tightly coupled to fluentd by name. The resources are either named "fluentd" or have some variant. This task renames collector deployment and supporting resources to "collector" upon which we can upgrade to an alternative when ready. Upgrades will be seemless from fluentd to fluentbit (or other)

Acceptance Criteria

• Logs are still collected after upgrade with no regression
• There are no resources (e.g. service, configmap) named "fluentd"
• The deployment is generally name agnostic of the technology
