[Operator] Review installation guide to use OperatorHub

    Description

      Today we rely on the operator.yaml installation method, but since we have the Operator installation on OpeartorHub/OpenShift Console, we should use that instead.

      We can still keep the YAML installation in place but with a note about being an unstable version from the main branch.
