CORS origin error of docker-compose services in examples

This property QUARKUS_HTTP_CORS_ORIGINS: "/.*/" needs to be added to some services started throw docker-compose at the examples to avoid the CORS origin error.

The goal is to review the examples that provide the option to start data-index with other services through docker-compose to avoid this CORS origin error.
