Upgrade the version of io.quarkiverse.jackson-jq to 1.1.0

Quarkus platform PR https://github.com/quarkusio/quarkus-platform/pull/623 revealed a conflict between Kogito and Camel extensions on the version of common dependency on io.quarkiverse.jackson-jq. It was downgraded to an older version to keep both members compatible. However, it would be good to use more recent versions of Quarkiverse extensions as dependencies of platform extensions.
