Align Data Index Dev Service image version with Kogito extension version

Currently, we always pull the latest version of kogito-data-index-ephemeral image, this can cause compatibility issues if the version that is used by the runtime is different/older. This also forces, in order to use an image with the latest, to always pull a new image, or at least check, even if a local image exists.

To avoid some of these issues we should align version of the extension with the image version.
