Investigate and in case of feasibility implement usage of asCompatibleSubstituteFor mode of testcontainers to enable overriding default images.

Currently the override is possible only if images are "similar enough", this might be too restricting.

If implemented, it is on users responsibility to handle the results - there's no goal to support all existing images.
