This issue is related to expression editor (old one, not new one KOGITO-3627).

Imagine there is a decision node 'Winner' (with some expression defined already) returning a custom data type 'tPerson'. Once the expression editor of 'Winner' node is opened, the data type is reset from 'tPerson' to '<Undefined>'
