Public API: Extended Examples

Following up to Matteo's comment here https://github.com/kiegroup/kogito-examples/pull/902#pullrequestreview-764311304

> I was wondering if you considered opting for a test that instead of replicating the REST codegen using the new API, would have shown instead how to directly use the incubation API from a user perspective.

e.g. the examples that are currently provided only use Maps. A good example would be to use mapping to POJO, use records instead of POJOs, project a value instead of returning the entire context etc...
