Extend test coverage for process monitoring

The goal of this Jira is to extend test coverage for "process-monitoring-quarkus" to check metrics the same way as "dmn-drools-quarkus-metrics" and to extend "process-monitoring-springboot" to check metrics the same way as "dmn-drools-springboot-metrics".
