Fix cypress test configuration in kogito-apps/ui-packages. Currently there are several tests some of them pass, others not. This needs to be fixed and CI adapted to run those tests as part of repository build (so that they're not left broken).

E.g. package management-console-webapp contains cypress test that is currently failing.

Goal here is to:

• Include cypress test execution into kogito-apps/ui-packages maven build.
• Fix the tests.
