Add metrics related files back in the operator bundle

Following up on KOGITO-4547 the issue is opened to add back the metrics related files that are currently deleted while creating our bundle. See: https://github.com/kiegroup/kogito-operator/blob/master/hack/create-olm-manifests.sh#L38-L40 These lines can be removed once 4.6.16 is widely used or later versions of OCP is already released
