Mongo persistence addon does not generate proto files needed by the data index srv

    Description

      The data index service needs the generated proto files to build the indexes and query. At the moment the proto files are generated only if the user's project as any dependency to a persistence module (infinispan, fs, mongo) and if `kogito.persistence.type==infinispan`.
