Due to removal of `target/classes/persistence` path, S2I tests of images are failing with persistence enabled

Error is `Phrase ''/home/kogito/bin/demo.orders.proto' -> '/home/kogito/data/protobufs/demo.orders.proto'' was not found in the output of S2I`

it was duplicated with `target/classes/META-INF/resources/persistence/protobuf/` and that last one was kept.

So we should update our images with the new path.
