Release pipeline: Handle X.Y.z.Final format and update pipelines accordingly

so we should have

• artifacts with version 1.0.0.Final
• images with version 1.0.0 (and 1.0) => do we want the 1.0.0.Final instead of 1.0.0 here
• operator with image version 1.0.0 and csv as v1.0.0
