Current there is no Quartz JobStore for Infinispan, and the MongoDB is outdated besides it is not official, so using a SQL DB seems the more feasible for now.

Provide the configurations and tests to use PostgreSQL as the backend for Quartz
Enable Cluster config as default
Expose all config and provide it on the Operator
Check with Cloud team the viability of using a PostgreSQL on Kogito Operator
