Description
- we currently have kogito-bom and quarkus-bom
- quarkus-bom however is pulling in the latest STABLE
- a kogito-bom of some sort should exist that pulls the correct quarkus version, with the latest from Kogito
- we should also be able to manage and release our quarkus extension separately
- we may also want to consolidate our simplified boms into kogito-runtimes
