[Doc]: JWS-2866 Rebase tomcat onto version 10.1.8 (Installation Guide)

This ticket covers work required on the JWS 6.0 Installation Guide to ensure the following:

• Any references to "Tomcat 9" are updated to "Tomcat 10" or "Tomcat 10.1" (unless they are within the context of JWS 5.x or RHEL Tomcat).
• Any references to "tomcat9" are updated to "tomcat10".

This ticket will also ensure that any references to "jws5" in package names or directory paths are updated to "jws6".
