Run LRA quickstarts against artefact lra-coordinator instead of lra-coordinator-thorntail

We have 3 versions of the coodinator for running in differen containers They have the maven artefact names coordinator-thorntail, coordinator-war and coordinator-quarkus. The quickstarts currently run against coordinator-thorntail but we'd prefer to run them using the quarkus version of the coordinator.

I'd also like to make this change for including a section in the narayana.io docs that explain how to run with quarkus instead of thorntail (which will be EOL soon).
