Although it is technically feasible since we are producing JDK 11 bytecode, we are still releasing WildFly Core upstream built using JDK 11, and there are no plans to change it in WildFly Core EAP.

We requested a new WildFly Core EAP build using JDK 11, hence 27.0.1.Final-redhat-00002 and the following PNC build https://orch.psi.redhat.com/pnc-web/builds/BFA4W6COFAQAA/details

This upgrade is to ensure the EAP testsuite for PRs is using a WildFly Core EAP built under JDK 11, which would be closer to the artifact finally released.
