[GSS][7.4.z] Clarify how to configure cluster settings other than S3_PING

The document shows how to configure S3_PING in the AWS environment, but S3_PING is already not working with buckets created after June 24, 2020, due to changes in AWS (for more details: Amazon S3 Update – SigV2 Deprecation Period Extended & Modified.

I think we need to add a note that S3_PING does not work for new buckets or a way to set up the cluster other than S3_PING.
