The EAP Operator current CSV does not mention its supported archs.
The next release of the CVS will have to add labels to specify that the operator runs on Intel, Z-series (and eventually PowerPC) by adding the labels described in The WildFly operator supports multi arch but its CSV file not mention them in the labels as described in https://olm.operatorframework.io/docs/advanced-tasks/ship-operator-supporting-multiarch/

operatorframework.io/arch. ppc64le: supported

These labels will have to be added to the new version of the CSV (current version is stored in https://github.com/jbossas/eap-operator-packaging/blob/aba06525e08c667242b23d96c8273f7eccbb3784/release-operator/manifests/1.0.0/eap-operator.v1.0.0.clusterserviceversion.yaml#L39
