[7.1] Documentation incorrectly states Elytron audit logging on by default.

Description

    During the development of EAP 7.1 audit logging was on be default and so has been documented this way, however for performance reasons the configuration was changes to switch it off by default however the documentation has not been updated to describe how to switch it on.
