[DOC-CD12] OpenShift doc minor naming corrections for CD12

I still can see "JBoss EAP for OpenShift 7" in table Table 1.1. Differences between JBoss EAP and JBoss EAP for OpenShift and "The JBoss EAP 7.1 OpenShift" in table Table 6.2. Configuration Environment Variables.

Next point (and also likely the more important one) is the templates naming (like "eap71-tx-recovery-s2i", "eap71-mongodb-s2i"). This should be changed once https://github.com/jboss-container-images/jboss-eap-7-openshift-image/pull/69 will be merged.
