In the documentation book Introduction to JBoss EAP, there are several places where Java EE 7 Web Profile and Full Profile are mentioned without their names beginning with uppercase letters. These are official names so I think they should be. On Oracle's compatibility webpage, http://www.oracle.com/technetwork/java/javaee/overview/compatibility-jsp-136984.html, where JBoss EAP is also listed, they are using uppercase.
