Add SimpleCache metrics

• Read hits/misses
• Stores
• Remove hits/misses
• size (of some sort, caches have a lot of metrics for size, unique, with expired, and so on)
• eviction

Ideally, the same metrics names as in https://github.com/infinispan/infinispan/blob/e4dc2e49cdf6bcb2f73e0c6a704f0d94a2ea77fe/core/src/main/java/org/infinispan/interceptors/impl/CacheMgmtInterceptor.java#L904
