[Docs]: Add a statement why we provide no performance numbers

As we discussed in the PM call we should have a statement why we have no performance numbers documented.

It should clarify that there are many factors, starting with the environment and end with throughput which have an high impact on those numbers.

I would thinks such statement should be in the first chapter as chapter "benchmarking ...." or so.

We can check with PM and engineering ...
