Review and understand the AppSRE requirements for logging; review what we currently have, and analyse the gap (which will reveal the tasks to close those gaps)

Acceptance criteria:

• Record the results of the investigation, especially:
  • Summarise the requirements
  • Summarise the gaps (what we still need to do to meet the requirements)
• Create and estimate tickets for follow-up tasks to close the gaps
