New Branch as latest or interop for gitops operator testsuite

      Currently for Layered Product interop testing on openshift-ci (CSPI-QE team) installs the openshift-gitops-operator from `latest `  channel.  [1]. To test the accompanying test suites for the latest operator, we have to manually change the branch value. for.eg. when we run the latest version of gitops(1.11) we use the branch `1.11` to go with it [2]

      What we are looking for is to have a branch `latest` OR `interop` which will always correspond to the latest operator. This way we do not have to manually change the branch version in the config.
