The Flink Connector Kafka project needs to be updates to use Flink 2.1. This is likely to require some code changes.

We will need to raise it on the dev mailing list, open an upstream JIRA and prepare a PR.

Ideally this would be included in the upcoming 5.0 release of the connector which will also contain the Kafka 4.0 update.
