Update the 1.1.0 doc.
Here are the sections and the correct references for the downstream docs:

• 2.4.2.1 should use registry.access.redhat.com/amq7/amq-streams-kafka-connect:1.1.0-kafka-2.1.1
• 2.4.2.2 and 3.3.15 should use registry.access.redhat.com/amq7/amq-streams-kafka-connect-s2i:1.1.0-kafka-2.1.1
• 2.6 should use registry.access.redhat.com/amq7/amq-streams-kafka:1.1.0-kafka-2.1.1

Update the DockerKafkaConnect and DockerKafka attributes in the downstream repo for the Streams 1.1.0 release.
