Use JBOD storage with single volume in our persistent examples

      After we implement ENTMQST-806, the JBOD storage should offer more flexibility in terms of adding volumes etc. At the same time the persistent storage for Kafka should have no added benefits over JBOD with single volume. We should therefore change all persistent examples to single volume JBOD.
