During ENTMQST-6096, we notice that the version of Gradle used to productize the opa-authorizer is well out of date and lagging behind upstream by two majors (6.3 vs 8.5 https://github.com/StyraInc/opa-kafka-plugin/blob/main/gradle/wrapper/gradle-wrapper.properties#L3).
