Cleaning up unnecessary dependencies

When using the Quarkus bom, a lot of dependencies are brought by it and we have to remove most of them which are directly into the pom (i.e. Vert.x ones, Netty, ....).

Leaving these direct dependencies break builds because overrides what Quarkus needs instead.
