Instead of creating a red hat branch on Gerrit (i.e. 3.1.0-redhat) for the Apache Kafka repo, we should point the build config to the upstream release tag (i.e. 3.1.0).

It means that we cannot do any customization directly on the build.gradle in the repo but we should use a Groovy script to run to customize it.

The objective of this Jira is about moving the customization we have around Gradle tasks to build Red Hat zip and tar.gz from the build.gradle to a Groovy script to run by the build config.
