Create more examples of provisioning and using router

1. Incorporate https://github.com/interconnectedcloud/qdr-monitoring/blob/master/mesh-3.yaml into docs
2. Check with fgiorget@redhat.com about yaml to set up operator
3. Check if there are any CRDs we could exercise
