The template based installation gave option to modify PVC using environment variable VOLUME_CAPACITY.

In Operator based AMQ installation, the size (2Gi) is hardcoded in source code of the operator.

Changing the size by creating the pvc manually before creating the resource helps. However it does not seems to be an ideal solution.
