Add missing readiness probe

At the moment the container image has only as readinessProbe, however this is not configured when we deploy via the operator.

We need to ensure this gets deployed and then also evaluate if it makes sense to also add a liveness problem, and/or update the existing readiness probe to work more effectively with the operator.
