Metric label values enclosed in double quotes twice

      1. Open Prometheus expression browser at `/graph`
      2. Enter "org_apache_camel_ExchangesTotal" and hit the Execute button
      3. Verify the label values, e.g., 'route' and 'processor'

      Current behavior
      Some Prometheus metrics are defined with label values enclosed in double quotes twice (see attachment).
      Example:
      org_apache_camel_ExternalRedeliveries{context="MyCamel",processor="\"log1\"",type="processors",} 0.0

      Expected behavior
      Label values should be enclosed in double quotes only once.
