CKC examples use 2.5.0 kafka version

      The examples README state to use:

      # Deploy a single node Kafka broker
oc apply -f https://github.com/strimzi/strimzi-kafka-operator/raw/0.19.0/examples/kafka/kafka-persistent-single.yaml

      but that does not work, it uses 2.5.0 kafka version and then the sink connectors fail with NoSuchMethodError errantRecordReporter() (ENTESB-15643)
