There are two minor issues with the CQL example:

the commands don't actually work when running outside of $KAFKA_HOME, since the config dir would also need to be specified with $KAFKA_HOME prefix.

This is also true for some of the other examples

"and add the correct credentials for AWS" is probably a copy-paste from the AWS example and should be replaced with something like "and set the correct sink host"
