[Apicurito] apicurito image can be rewrited with the old way (CR definition)

      The old way of setting a UI image which should not work right know works.

      When CR is defined as:

      apiVersion: apicur.io/v1alpha1
kind: Apicurito
metadata:
  name: apicurito-service
spec:
  # Add fields here
  size: 3
  image: ${IMAGE}

      UI image which is hardcoded in conf is rewritten
