Your call, but either ejb-jar.xml or jboss.xml needs to support XML deployment for @Service and @Consumer/Producer JBoss EJBs. These are new JBoss EJB types. I don't think we can extend ejb-jar.xml, although, maybe you could experiment with a jboss specific namespace?
