Although there are some issues with Kafka transactions (KAFKA-17754) which is a cornerstone for exactly once delivery in Kafka Connect and thus EOS in Kafka Connect is inherently broken (see also discussion in RedPanda Jepse report), these are rather edge cases and users still may want to use it as this is good enough for their use cases. Enable EOS in all main Debezium source connectors
