Mongo supports the dynamic data model, so the standard transformation org.apache.kafka.connect.transforms.ReplaceField (https://kafka.apache.org/documentation/#connect) can't be applied to fields of Mongo documents. It would be great to be able to use a field.renames setting to rename these fields.
