Quarkus LTS (3.15) goes into feature freeze tomorrow (Aug 14) and is expected to be released by the end of September. We unfortunately can't linger waiting for a Quarkus fix for the next month IMO.

I've spoken with Eric and Andrea on Apicurio, they're going to work to cut a 2.6.2.Final that addresses some class loader issues in Quarkus and their hope is to get that integrated into 3.15; however, in the short-term we'll explicitly bump to 2.6.1.Final until 2.6.2.Final is released and we align with Quarkus 3.15 LTS.
