Changes implemented in DBZ-7304 to improve consistency in the connector documentation about snapshot modes created duplicate anchor IDs. The downstream User Guide requires unique IDs across all of the connector files.

This issue makes the following changes:

• Adds comment annotations to create alternate ModuleID  strings for the duplicate IDs for use downstream
• Removes (comments out) xrefs in the MongoDB doc that target a non-existent default snapshot workflow topic.
