Which use case/requirement will be addressed by the proposed feature?

I use Debezium Oracle-source connector with Avro Serialization. It replaces unsupported symbols in field names using schema.name.adjustment.mode.
If I have field name CAR$BRAND in Oracle, in Kafka it's going to be replaced to CAR_BRAND or CAR_u0024BRAND.
So debezium jdbc-sink connector will use this filed names to create/use table in target db. It would be really helpful to have a propertie in jdbc-sink config that allows to rename back all field names = replace  _uxxxx with corresponding unicode.
