Use downstream "processors" schema for Debezium UI SMTs

    Description

      Instead of providing "technical" SMT configuration that is generated from the registered SMT classes we should provide a mapping to semantic config, like the one developed for RHOC/donwstream, based on available SMTs or based on a DebeziumConnectRestExtension.
