Typos in metadata of signaling and ad hoc snapshots docs

Documentation fails to build correctly because the `link-signalling` attribute is spelled inconsistently in the incremental snapshots partial (`con-connector-incremental-snapshot.adoc`), and an omitted closing quote in the `debezium-signaling-stop-ad-hoc-snapshots` anchor ID definition in `signalling.adoc`.
